Food preservatives are the chemical substances which are added to preserve food and control its wastage. Preservatives slow down or prevent the growth of microorganisms in food. There are two types of preservatives, natural and chemical. Salt, sugar, lemon juice, etc., are natural preservatives and sodium benzoate, potassium meta-bisulphite, citric acid, etc., are chemical preservatives.

Uses of food preservatives are:

1. Preservatives prevent or retard spoilage caused by chemical changes.

2. Preservatives help to maintain the freshness of appearance and consistency.

3. Preservatives prevent the growth of microbes such as bacteria, fungi that cause spoilage.

These preservatives can be avoided by washing them with water.
