Proteins are defined as a class of nitrogenous organic macromolecules. The structural unit of protein is an amino acid. The amino acids are connected to each other by peptide bonds which form polymers called polypeptide chains.

Proteins are usually classified according to the English School of Physiologists as follows:

1. Simple Protein: The proteins which yield only amino acids or their derivatives upon their hydrolysis are called simple lipids.
Examples- albumins, globulins, protamines, prolamines, histones.
2. Conjugated Protein: The proteins in which simple proteins remain bound with some other non-protein substances are called conjugated proteins or compound proteins.
Examples- nucleoproteins, phosphoproteins, metalloproteins, glycoproteins, lipoproteins.

3. Derived Protein: The proteins which are obtained as intermediate products upon hydrolysis of simple or conjugated proteins are called derived proteins.
Examples- polypeptides, peptones, proteans, proteoses, metaproteins.
