Sucrase is a digestive enzyme that catalyzes the breakdown of sucrose molecules into fructose and glucose. A sucrose molecule has a dent in it called the active site. This has a shape that is complementary to the shape of part of a sucrose molecule. The substrate, sucrose fits into the active sites of the enzyme, sucrose and forming an enzyme-substrate complex. When the sucrose molecules are in the active sites, the enzymes break them apart.
The diagram shows how sucrase breaks down the sucrose molecules. In the diagram, sucrose slots into the active site of the enzyme, sucrase. The enzyme changes sucrose molecules into new molecules called products named- fructose and glucose. The enzyme is unaltered and ready to accept another part of the sucrose molecules.
