How do you make and keep ice in the middle of the desert with no electricity or refrigerator? In approximately $400 BC$, ancient Persians built yakhchals to make ice in the colder months and keep throughout the year. Heat rose out of the top of the conical structure, keeping the inside and underground cavern cold.
