How do you make and keep ice in the middle of the desert with no electricity or refrigerator? In approximately 400 BC, ancient Persians built yakhchals to make ice in the colder months and keep throughout the year. Heat rose out of the top of the conical structure, keeping the inside and underground cavern cold. These conical structures were made of sarooj, a mixture of clay, sand, lime, ash, egg whites and even goat hair! The inside of the cone is empty, with the water and ice in a cavern underneath it.
