Roots of the plants absorb the water and minerals from the soil. The water and minerals are transported through xylem and to the leaves and stem of the plants. The leaves utilize only about 1% of the total water in the process of photosynthesis. The rest of the water is evaporated through the surface of the leaves. There are the following two reasons behind the excess amount of absorption of water:

The minerals are required for the growth, development, and other activities of plants. These minerals remain dissolved in the water. Therefore to obtain maxiumum amount of minerals, plants need to absorb excess water. The plants utilize the minerals and the excess water is released in the atmosphere.

The rate of transpiration increases with the surrounding temperature. If the roots absorb less amount of water (or only required amount of water), then due to the high temperature, that amount of water will be lost. This leads to the wilting of leaves.
