Read the passage below:
An organic compound with acidic properties is known as organic acid. Most common organic acid is carboxylic acid. Its acidity is due to the carbon group (-COOH) present in it. Generally, organic acids are weak acid and do not dissociate completely in water. Lower molecular acids however are miscible in water. Organic acids are commonly used to preserve food because of their effect on bacteria. They penetrate the bacterial cell wall and disrupt the cell. Salt of lactic acid such as sodium lactate and potassium lactate are widely used as antimicrobials in the food industry.
