We convert solid into a liquid and subsequently liquid into a gas by supplying heat. If so, won't the particles of gas have higher energy than in the other two states?

Heat a few crystals of iodine in a watch gas. Collect the vapours in a jar. Keep another jar on top of it in an inverted position. What is the reason for the changes in the gas jars?
