Respiration without the involvement of oxygen is Anaerobic respiration. Examples: glycolysis and fermentation. It takes place in the fluid portion of the cytoplasm. Anaerobic oxidation of glucose to produce 2 molecules of ATP, ethyl alcohol and some heat energy is known as alcoholic fermentation. It occurs in certain bacteria, fungus (yeast), etc. Yeast produces ethyl alcohol from any fermentable carbohydrate i.e., corn, starch, molasses, potatoes, grapes, sugar beets, etc.

The anaerobic and incomplete breakdown of glucose that results in a gain of two ATP and two molecules of ethyl alcohol and CO2 is known as alcoholic fermentation. The overall reaction is mentioned below:
Glucose→2Ethanol+2CO₂+50Kcal

In plant cell, pyruvic acid in the presence of enzyme pyruvic decarboxylase forms acetaldehyde and carbon dioxide. This acetaldehyde is reduced to form ethyl alcohol in the presence of the alcoholic dehydrogenase enzyme.
