What is denatured protein?

Native protein is the most energetically stable state of a protein which are found in a biological system with a unique three-dimensional structure and biological activity. A process that changes the physical and biological properties of proteins without affecting the chemical composition of a protein is called denaturation. It is caused by certain physical or chemical treatments such as changes in pH, temperature, presence of some salts or certain chemical agents. During denaturation, the protein molecule uncoils from an ordered and specific conformation into a more random conformation and $2^{\circ}$ and $3^{\circ}$ structures are destroyed but $1^{\circ}$ structure remains intact.

Example- Coagulation of albumin present in the egg, curdling or milk, coagulation of milk.

Note- A denatured protein may spontaneously refold into it original structure when the suitable condition is re-provided. This is called the renaturation of protein.
