When an atom in protein molecule are joined to one another through covalent bonds to form chains. On hydrolysis, all protein gives $α$ -amino acids joined by polypeptide linkage. A bond is formed by the condensation of two or more same or different $α$ -amino acids. The condensation occurs between amino acids with the elimination of water. The carboxyl group of one amino acid and the amino group of another amino acid get condensed with the elimination of water molecules. The resulting $CO - NH$ linkage is called peptide linkage. The polyamide chain having large number of $α$ -amino acids $(100 - 1000)$ when joined by peptide bonds is known as polypeptide. By convention a peptide having molecular mass upto $10, 000 μ$ is called polypeptide, while a peptide having a molecular mass more than $10, 000 μ$ is called protein. Each polypeptide in protein has amino acids linked with each other in a specific sequence which finally gives its primary structure.
